Please, uninstall the addon. Restart Thunderbird and than re-install the addon in version 7.0. Some months ago, I've seen your problem here, too. After re-installing the addon the problem was gone and I'm not able to reproduce it again. In theory there is no obvious reason for this problem. Maybe it's a cache problem or some interference between some addons.

That's weird. Unfortunately, there are sometimes cache problems during development because the commands to clear the caches (also according to developer resources) do not have a 100% guaranteed effect. In addition, since Thunderbird 78 there seems to have been interactions between addons that can hardly be explained plausibly.
OK, I was too fast. Couple of hours have passed and the issue came back again.
Any way I could help debug it?

2) Which other Add-ons are installed?
3) Entries in error console (errors, warnings, debug) which are related to javascript filenames begining with aht_?

Menu Tools → Developer Tools → Error console
You could install and use the following addon development version, which writes a lot of debug lines like "AHT: ........." in the error console. They could help me to understand what happens. The really important lines in case of errors do not have this "AHT: ......". They will show only the error messeage and (on the right) the name of the javascript file, in which the error occurs.
If the problem occurs, copy all the entry lines out of the error console and send it to me, please.

It happened once but I was kinda in a hurry and couldn't gather the logs. It seems it happens less often recently, which is somewhat odd.
OK, it happened again and I managed to grab the logs (see attached: console-export-2022-1-24_11-25-16.txt) and noticed weird thing - in the status bar I saw "Original HTML" and upon right-clicking it said "Plain text" and only after re-cliking on "Plain text" it went back to that mode:
Interestingly, after switching to "Plain text" it was OK for a couple of hours and it's back to displaying HTML ("Original HTML in the statusbar, "Plain text" in the context menu selected)

Unfortunately, it is difficult to understand what exactly is happening to you. Is it just an incorrect display of the control element in the status bar at the bottom of the window this time? Or is the HTML mode really still activated (because the automatic switch back to plain text fails) and when selecting and displaying further e-mails, these are then unintentionally displayed with HTML?

Well, I couldn't show complete email unfortunately. In a nutshell: the mail was displayed in HTML, statusbar said "original HTML" but it's context menu had selected "Plain text". Only after clicking on Plain Text it went back to actual plain text.
Didn't logs share any information about the issue?
The issue itself is quite odd as frequency of it's procurance is quite uneven - sometimes it happens only once in a couple of days, other time it's almost every couple of minutes/hours.

Maybe I should create a version with some more/different log entries, to get closer to the problems reason.

I noticed in your logs that the "MsgMsgDisplayed" listener (which is necessary and actually used to reset the settings at the right moment) is not registered when this should happen. At the moment I don't know the reason for this. But I'm investigating. So far I would probably only think of an improvised workaround, which is somehow unsatisfactory.
